Ingredients & Equipment

▷ Ingredients:

  • a cup of zucchini noodles
  • a cup of carrot noodles
  • a cup of fresh rocket salad (arugula)
  • a cup of chickpeas
  • a cup of chopped dried tomatoes
  • a cup of crumbled goat or sheep Feta cheese
  • a cup of mung beans OR soybean sprouts
  • 3 x sliced hard boiled eggs
  • a cup of goat or sheep yoghurt
  • 1 x tablespoon of olive oil
  • 1 x tsp. of dijon mustard (sugar-free)
  • salt
  • 12 - 14 x rice paper rolls
  • a large bowl of water

▷ Equipment:

  • spiral slicer / vegetable slicer
  • small bowl
  • large bowl
  • cup
  • tablespoon
  • teaspoon
  • chef's knife

Prep. time: 20 - 30 minutes

Step 1

Prepare all ingredients

Cut and prepare all ingredients. Use bowls if needed. Keep the ingredients around the tabletop where you will wrap your vegetarian summer rolls.

Slice zucchini and carrot noodles

Use a spiral slicer to slice your zucchini and noodles.

We use this one by Fackelmann brand: Spiral Slicer (no advertisement!)

Step 3

Prepare mustard & yoghurt cream

1 - 200 gr. of goat or sheep yoghurt into a bowl.

2 - add a pinch of salt

3 - add 1 - 2 x teaspoons of Dijon mustard (sugar-free)

Step 4

Prepare rice paper wrap

1 - fill a bowl with warm water

2 - dip the rice paper in water

3 - wait for 15 - 30 seconds (depends on how thin your rice paper is) until the rice paper is pliable

4 - place the rice paper on a large plate or clean kitchen top.

Now your ready for your first wrap! ????

Place the filling

1 - add a bit of fresh rocket salad

2 - add a bit of zucchini noodles

3 - add a bit of carrot noodles

4 - add a bit of crumbled Feta cheese

5 - add a bit of chopped dried tomatoes

6 - add 1 - 2 slices of hard boiled eggs

7 - add a couple of chickpeas

8 - add a bit of mung beans OR soybean sprouts
Step 5: place the filling

Step 6

Add yoghurt & mustard cream

Add a little of the yoghurt & mustard cream on top of the filling with a teaspoon.

Wrap the rice paper roll

1 - begin by pulling the bottom flap of the rice paper

2 - go over the filling

3 - make a full roll (you are almost there!)

4 - fold in the side flaps

5 - ready!

Step 8

Repeat and serve!

1 - Repeat steps 4 - 7 until you use up all ingredients.

2 - serve your vegetarian summer rolls and enjoy a beautiful day with your loved ones.
