We swapped regular sugar for erythritol, which makes them sweet and scrumptious without using refined sugar. Ingredients & Equipment

▷ Ingredients:

1 cup ground almonds (almond flour)
1 cup chestnut flour
2 cups grated carrots
50 gr. grass-fed butter (unsalted)
3 organic eggs
35 - 45 gr. erythritol
2 tsp. baking powder
5 gr. orange peel
2 gr. vanilla bean powder
1 tsp. cinnamon
1/4 tsp. nutmeg
A pinch of salt

▷ Equipment:

2 x large bowls
teaspoon
tablespoon
fork or whisk
cup
grater
saucepan
9 x muffin liners

Preparation time: 15 minutes

Baking time: 25 to 35 minutes at 175ºC / 340ºF

Preparation

▶︎ Step 1: Prepare the dough

1 - 1 cup of ground almonds into a large bowl (00:17)

2 - add 1 cup chestnut flour (00:20)

3 - add 35 - 45 gr. erythritol (00:25)

4 - add 1 tsp. cinnamon (00:29)

5 - add 5 gr. orange zest (00:35)

6 - add 1/4 tsp. nutmeg (00:41)

7 - add 2 tsp. baking powder (00:51)

8 - add 2 gr. bourbon vanilla (01:02)

9 - add a pinch of salt (01:15)

10 - mix all ingredients (01:20)

11 - melt 50 gr. of butter (01:32)



▶︎ Step 2: Prepare the egg/carrot mix

1 - crack open 3 eggs into a second bowl (01:39)

2 - beat the eggs (01:50)

3 - add 2 cups grated carrots (02:01)

4 - mix (02:11)

5 - add the melted butter to the egg/carrot mix (02:20)

6 - mix (02:24)

7 - add the egg/carrot mix to the first bowl with the dough (02:28)

8 - mix (02:40)

9 - prepare the baking cups/cupcake liners (03:09)

10 - fill in the baking cups/cupcake liners (03:19)

11 - prepare the baking sheet (04:08)

12 - bake at 175ºC / 340ºF for 25 to 35 minutes (04:12)
